Tzatziki Chicken with Roasted Vegetables
Ingredients
4 Skinless boneless chicken breasts
1 cup Brooke Farms Tzatziki
2 yellow peppers - chopped
2 medium zucchinis - chopped
1 medium red onion - chopped
1 cup cherry tomatoes
kosher salt, pepper
olive oil
Thyme and oregano

Instructions
Marinate chicken breasts in Tzatziki in the refrigerator for at least an hour.
Preheat oven to 425 degrees
Toss vegetables in about 2 tablespoons of olive oil to coat. Spread on a baking sheet lined with tin foil (for easy clean up). Sprinkle with kosher salt, freshly ground pepper, 1 tablespoon each of dried thyme and oregano. Add chicken to baking sheet and cook for about 30 minutes or until chicken is cooked through and vegetables are browned. Serve with couscous if desired. Serves 4.
